Weight Watchers Chicken & Spinach Soup with Fresh Pesto recipe

2 teaspoons plus 1 tablespoon extra-virgin olive oil, divided
½ cup carrot or diced crimson bell pepper
1 giant boneless, skinless rooster breast (about 8 ounces), lower into quarters
1 giant clove garlic, minced

1½ teaspoons dried marjoram
6 ounces child spinach, coarsely chopped
1 15-ounce can cannellini beans or nice northern beans, rinsed
